For me, food is a form of imagining, of dreaming. I cook the same way that I write, paint and create. I contemplate the composition of food in every dish as I would words in a poem, colour on a canvas or notes in a song.
Each mouthful, each meal; consists of specific attributes that can only exist within that specific moment and are fuelled by the atmosphere and surroundings that evolve all experience into completely unique and exclusive flavours, indulgences, journeys, memories.
