Already in the 3rd millennium, trade routes connecting the two main centres of civilization of Mesopotamia and Egypt ran through Syria. This important route was used by Phoenicians, Persians, Greeks, Romans, Byzantines, Arabs and Ottomans and later became a part of the Silk Road.

Open to influences the cuisine evolved combining ingredients that passed through from other corners of the world and developed rich and vibrant food culture that will satisfy any hungry soul on the road to Damascus.
